Vitamins and minerals
Many berries are rich in vitamin C. Vitamin C is the best known antioxidant in berries. It protects the body from harmful oxidation, prevents tiredness and improves absorption of calcium and iron. Vitamin C is also necessary for the formation of collagen, support material of cells. Vitamin C enhances the antioxidant effects of vitamin E. Sea buckthorn berry, blackcurrant, cloudberry and rowanberry are especially rich in vitamin C. The EU’s recommended intake for adults is 80 mg of vitamin C per day.
Vitamin E is a fat-soluble vitamin which works as an antioxidant in the system and protects cells and fatty acids in the system from the harmful effects of free radicals which are generated in metabolism. Vitamin E is a general term for several similar molecules. Berries also contain a lot of vitamin E, especially sea buckthorn berry, cloudberry and blackcurrant. The recommended daily intake for adults is 12 mg of vitamin E.
Berries also contain a lot of vitamin K. Vitamin K is a fat-soluble vitamin which improves the normal coagulation of blood and maintains normal bones.
Many berries are naturally good sources of potassium and manganese.
Mineral and vitamin contents of dehydrated berries are many times higher compared to fresh berries, because water is removed when berries are dehydrated. This is why dehydrated berries and berry powders are an excellent addition to everyday diet.
